Brinjal curry

Ingrediants:
brinjal-3
onion-1/2 or shallots -7
tomato-romo 1 small-1
tamarind pulp-3pulp
coconut-shredded(1/2cup)
cashew r badam-4
chillipowder-2tsp
coriender powder-21/2 tsp
turmeric powder-4pinch
mustard+urad dhal+fenugreek seeds for seasoning.

Method:
In kadai oil+mustard+urad dhal+fennugreek seeds+curry leaves+onion.fry it for 5mts.Now + all powders+tomato.fry it.sprinkle some water fry it .u can add 1/2 water ,fry it until tomato gets smashed.now add coconut+cashew paste.stir it well for 5mts.
Now add tamarind pulp.Add 2cup of water make it to boil by covering the kadai.after 10mts add brinjal.cover and make it to boil for 5mts..r make it to boil until some little oils floats over.
switch off and granish with coriender leaves..

Goes good with rice with carrot or cabbage poriyal..
